Proceeds to send our local food representatives to Terra Madre 2010
We have 2.5kg packages of the Red Fife Wheat flour and 1kg packages of the berries we brought in for Terra Madre Day December 10, 2009. Contact Urban Grain to buy locally grown wheat, the FarmFolk/CityFolk Grain Chain project, their project aimed at expanding the production of grain, and Anita’s Organic Grain and Flour Mill to buy a variety of local and organic milled flours.
The wheat Slow Food Vancouver used for Terra Madre Day 2009, was grown by Holly Peterson in Saskatchewan and milled by John at Anita’s Organic Flour Mill in Chilliwack. The flour and milling were donated to Slow Food in support of Canada’s first Presidium, Red Fife Wheat. The Presidium seeks to bring Red Fife wheat back into commercial circulation for use in artisan break baking. Farmers, millers, researchers and bakers have successfully increased seed stocks and re-commercialized this wheat on the brink of disappearing. Today more artisan bakers are using Red Fife wheat and a growing numbers of consumers, or co-producers to use a Slow Food term, are demanding this heritage wheat bread.
The Presidium helps to increase ongoing quality, promotion and the use of Red Fife across Canada.
If you use Red Fife Wheat, let us know of your experience baking with the flour and share your recipes with us. We will post them on our site. I’ve baked my oatcakes using the flour and the results are fabulous. My banana bread is very moist and my cousin says that her biscuits and brownie are her best ever.
