The Organic Butcher Event

A Slow Food event featuring Sebastion Corftez of Sebastion Co. Fine Organic Meats. Sebastion is passionate about his craft and his quality. This should prove to be a very popular event.

Sebastion, who is originally from Chile, has recently moved to Vancouver after many years in Toronto with a long history in the food business. He was a chef in Toronto before becoming a full time butcher and has always worked with organic meat. He has planned a taste of South America for us and will be preparing a Vacio steak to taste. This is an Argentinean cut, slow cooked over charcoal, served along with samples of the national cocktail of Chile, the Pisco Sour. He is preparing a Chilean salsa to accompany the Vacio steaks as well.
He will give a demonstration of butchering while answering any questions on organic meats. Sebastion is a committed organic butcher who has never worked in mainstream butchering and is a wealth of information on not only the meat but also how to prepare it.
We are expecting a big turn out for this event so make sure to mark your calendars. You won’t want to miss this rare chance to get the real goods on organic meats from a true expert, a dedicated old fashioned butcher.
