Leeks

Leeks and onions are abundant this month. Although both are from the same family, the flavour of the leek is much more delicate and sweet.  Called poor mans asparagus, it is used in both European and Asian cooking. You can substitute leeks for onions in dishes that call for onions as flavouring, but not vice versa.

Look for firm stalks with a good portion of white on the bottom. Avoid stalks that are bulbous at the bottom, because they are too mature. Trim away the dark green stalks, leaving only the tender pale green and white parts. The stalks hold a lot of dirt, so slice them down the centre and rinse under cold water to clean.
Try them grilled with a vinaigrette, or caramelized over garlic mashed potatoes.
